MessageGreat site! Can't believe I've never been here before. I, too, am committed to Cajun/Creole cuisine.

I lived in New Orleans 20 years ago, and I still miss it every day.

Thanks,

MessageFor as long as I can remember, I've wanted to go to New Orleans. I'm getting closer, got to drive through LA, but couldn't get hubby to "swing by". Since he has relocated to TX and I'm in FL, I'm sure in one of the many trips back and forth I'll finally get my chance! I'm excited to go home tonight and make the beignets as kind of a primer for N.O. Thanks for sharing you experience with us!

MessageReporting in from River Ridge, La,
Never made etouffee in my life.Used the recipe I found here after researching multitudes. All of the others used tomato sauce or paste or even Ro-Tel! Etouffee is supposed to be BUTTER SAUCE in a Roux! Thank you so much. My dish turned out waaaaay better than I had ever expected! I think it might have been borderline erotic. This is where I turn to for my recipes from now on. Keep it up. Looking forward to some CRAWFISH bisque and etouffee recipes
