MessageHi Nola, I loved your website and found it while looking for Austin Leslie's fried chicken recipe. I am an American living in London (18 years!) and have tried several ways to cook fried chicken. Well I'm on the right track now! Nobody here knows how to do it well. Being from Kansas City, Mo. I have always had a better idea for chicken and pork than anyone in this town. It is a real pleasure finding your real enthusiasm and expertise for New Orleans cuisine! I have always wanted to come and 'eat' my way through your part of the country, but haven't been blessed with the money nor time. I sure hope things are going better for folks there in New Orleans, although I fear from the news that there are still hard times ahead? I am the son of a Croatian emigrant and a blood member of the Cherokee tribe so I am always searching for the real America. I am glad to have found it in your loving blog! Thanks, talk soon. I too am from Detroit, born and raised there. When my father retired from the auto factory he moved to New Orleans. I was visiting him and my truck was stolen leaving my husband, two children and I stranded. New Orleans captivated me and the food cannot be matched anywhere else.

At eight years old I could put a complete meal on the table for my parents and 5 siblings. I have loved to cook from the time my mother would put me on a chair at the table to watch and learn from her. At seventyfive I am still interested in food, especially creol/cajun.

We moved to Pearl River and lived there for twenty years. I have had a few of my food experiments published in the Slidell newspaper/ One that gor a lot of attention was oysters that I put in with my crabs to boil. Another was oyster tomatoe spaghetti sauce. My brother asked a cajun man that shucked oysters in the French Quater to come have dinner with me. When he went back to New Orleans he took a large jar of the sauce so his boss could try it. It was added to their menu and was well received.

MessageI am a true southern cook but my love is of that with taste with a kick...I have traveled with my husband abroad to many west Indian cooking....I was taught a/b a green seasoning they use on flying fish...looks much like file but different...I have many home proven recipes that I will share only when asked...maybe a cookbook in store for retirement of my many travels, experiences, cultures and of cours cuisine....Live Well...thanks for your info on file..

MessageAfter watching a Food Netwok program on the muffeletta I went in search of a recipe and came upon your site. I'll be making these for the Super bowl and can't wait to try them. There is as authentic italian deli near me that will supply all the ingredients. Wish me luck. smilie
