MessageGreat recipes,
Truly pro.
Love the "training wheel" comments about cream in the Beurre Blanc. Sounds like a couple of my old chefs.

MessageThanks for your site. Today is my first day back from New Orleans - Mardi Gras. What a great place. I was looking for recipes for the great food I ate while there.

MessageJust got back from N.O. (a first timer) What a gastronomical fiesta! My wife and I started out with Cafe du Monde and did not stop eating for about 3 days. Really liked "Pere Antoines" for ettoufe and red beans and rice...Awesome! Mullates had a great Jambalaya (chick and shrimp) and on and on.

Today I thought I would surf for a beignet recipe and found your site. The dough is rising as I write. Thanks so much! smilie

MessageGreetings from Seattle, WA.

Great site. Try searching for "catfish jambalaya" and see how many sites feature the same tired recipe. I'm delighted to discover the real deal.

Best wishes to our friends on the gulf.

Mark
