Your recipes are .....extraordinary. I visited New Orleans Mardigras this year (2010) Our hosts were real cajuns who invited us to diner to their homecooking. When I arrived PR I was dying to cook the shrimp remoulade, the chicken andouille gumbo, the seafood gumbo...and of course, the king cake. I went for all of it, decorations galore, the wigs, the beads (brought home 2 bags) the bathroom towels with the mardigras emblem, who dat tee shirts etc.(I think I over did it, not all my friends understood) Anyway, you are the best, the funny way you explained the recipes and the end product was superb. Thank you for my successful night. Keep it up.

MessageI've been trying to figure out what kind of cuisine is made in New Orleans. A good friend of mine her husband is from their and I thought it would be nice to prepare something that he is familiar with. Not to mention we have a hard time locating the spices that are used in New Orleans.

MessageI live on the ISle of Lewis, off the coast of scotland, a book I was reading about new orleans mentioned beignets, did a search on bing and you popped up. So now beignets are alive and well on the isle of lewis.
