MessageThis Jambalaya was a hit with our family. We had 10 people to feed so I doubled the recipe and had barely enough after everyone wanted seconds, thirds... The infusion makes the flavors blend wonderfully and the tasso gives it a great body. This time I used Polish sausage as the first try with andouille didn't sit well with some folks. Adding the rice to it and baking does make it taste better than just spooning over cooked rice.
